Working Girl Lunches: Part ONE

As part of being a meal planner, I love getting ALL my meals ready/ironed out for the week!  This doesn’t just include dinner, it most certainly includes breakfast, lunch and snacks as well!  Lunch is a meal that I find particularly hard for people.  Tons of people just go out, get lunch, which can mean unhealthy choices, and unnecessary spending!  these are two things I’m not a fan of, so I have some great lunch options for you today!

Turkey Avocado Toast/Avocado Toast

NOTE: you can do with or without turkey! 

Directions:

  • Toast two pieces of whole wheat bread 
  • Cut open avocado, disregard pit, SMOTHER toast with it!
  • Add dash of: salt, pepper, red pepper flakes, turkey, cheddar cheese

*YUM ALERT! & so easy!*

 

Cranberry / Strawberry Balsamic Salad

Directions:

  • Use whatever lettuce you like [I use spinach]
  • Put healthy amount of spinach [1-2cups]
  • Add 5-6 sliced strawberries
  • Add a handful of craisins!
  • Add blue/gorgonzola cheese [to liking]
  • In SEPARATE container, pack a little balsamic dressing
  • Top with balsamic when its time to eat!

The Make Ahead Lunch:

IF you can do this before hand one day:

  1. Prep a few chicken tenderloins by adding a dash of salt and pepper, and then covering in TACO SEASONING [the packet!] 
  2. Drizzle a TINY bit of olive oil on top of chicken before placing in oven!
  3. BAKE chicken 20-25 minutes in oven [375 degrees]
  4. Then: for your lunch!

Take one to two chicken pieces out!

Create either:

Chicken Taco Salad
-OR-
Chicken Taco Wrap

Chicken Taco Salad:

Directions:

  • Use spinach/kale for lettuce 
  • Add some green pepper slices
  • Add some cherry tomatoes
  • Add cheddar cheese
  • Place chicken on top!
  • Top with a drizzle of taco sauce [or keep separate until serving!]

 

Chicken Taco Wrap:

Directions:

  • Use whole wheat tortilla:
  • Put a drizzle of taco sauce, smear all over tortilla
  • add a bit of spinach
  • add a few green pepper pieces [for crunch!]
  • add cheddar cheese
  • add one piece chicken [you can slice it before hand if you desire!]
  • WRAP IT UP, girl!

Grocery List & Printable

Here I’ve included the groceries you’ll need to make all of the above lunches! I have also created a meal plan/grocery combo printable that I will show you and link to for you to download!

  • One loaf Whole Wheat Bread
  • One Avocado
  • One Package Turkey [you don’t need much!]
  • Red Pepper Flakes
  • Cheddar Cheese
  • One pint strawberries
  • One package Craisins
  • Balsamic Dressing
  • Olive Oil
  • One container spinach
  • One container kale
  • One container Blue/gorgonzola cheese
  • Whole Wheat Tortillas
  • Taco Seasoning Packet
  • 1 Pack Chicken Tenderloins
  • Cherry Tomatoes
  • 1 Green Pepper
  • One bottle Mild/Medium Taco Sauce
