I simply ADORE basil, and it is basil season right now! I had to find a way to incorporate this into mine and Jon’s dinner routine, but all the while keeping it healthy! This Cast Iron Tomato Basil Chicken with Quinoa is a winner! It is the type of meal to fill your kitchen with delicious scents, and your belly with a satisfying meal!
The key to this recipe is the fresh ingredients. If you have a cast iron skillet, even better! I believe it really packs an extra punch using this pan to saute the chicken and combine your flavors, but of course, a regular skillet will suffice as well!

Ingredients
- Fresh Basil
- One Pound Chicken Tenderloins/Breasts
- 12-15 Cherry Tomatos [Purchase one pint]
- 4-6 Cloves Garlic
- 2 Handfuls Spinach
- Olive Oil
- Salt & Pepper
PREP
- Chop 4-6 [your preference] garlic cloves
- Chop one handful fresh basil
- Slice your dozen cherry tomatoes into thirds
- Rough chop your spinach
THEN
- Cook Quinoa to directions on package in separate pot [it takes a bit!]
- Oil up your cast iron
- Once hot, lower to medium, add all chicken, and a tiny bit of the garlic you chopped [1/2 a clove will do!]
- Also add a bit of the basil to the pot, you will continue this process.
- Simmer up your chicken, adding a bit more oil if need be, but not too much.
- Keep adding more and more of the garlic and basil until you have used about half of what you chopped.
- Once chicken is cooked and gained a beautiful brown color, add in the rest of your fresh ingredients
- [tomatos, spinach, basil, garlic]
- At this time, add a bit of salt and pepper to the pan
- Simmer all together until spinach and basil are cooked, and the aromas of the basil are coming through.
- At this time, add the quinoa
- Stir with wooden spoon [in effort to not crush the quinoa or tomatos]
- Allow to simmer additional five minutes.
- SERVE!
